Interview Nathan Outlaw – Part One – Feb 2013

On behalf of Ellis Wharton Wines, this is the first of two interviews with Cornwall’s top chef, focusing on sustainable fishing and his exciting new venture in Looe.

When Ellis Wharton Wines was in its infancy in 2006, a talented young chef by the name of Nathan Outlaw took up residency at The Marina Hotel in Fowey, and became our first customer. Seven years and two Michelin Stars later, our deliveries now make their way to Nathan in the village of Rock on the North coast of Cornwall. We thought it was time for a catch-up and began by talking about how everything he does is tied up with the future of his most essential ingredient – fish.
